Sweet Chili Dressing
Ingredients
1/2 cup water
1/2 cup sugar
1/4 cup white vinegar vinegar
2 cloves garlic, chopped
1 to 2 red chili (Thai bird’s eye chili or cayenne)
1/4 cup fish sauce
Directions
In a small sauce pan, combine all of ingredients except fish sauce, stir. Bring to boil, reduce heat to medium and simmer for 10 to 15 minutes until sugar has dissolved and vinegar’s sharpness has gone. Remove from heat; add fish sauce; stir to combine. Cool to room temperature before serving. You can keep it in refrigerator for 1 week.

Is the fish sauce needed or can the dressing be made without it and still taste as sweet?
Fish sauce is the main ingredient of the sauce. It doesn’t give the sweetness(sweetness is from palm sugar) but the most flavor to the sauce. With out it, it won’t taste as good as it should be, so please make it with fish sauce. 🙂
I m looking forward to making the sweet chili dressing, but I have a question. What kind of sweet chili sauce do I use for the base?
You don’t need base, just following the recipe you will have sweet chili sauce.
