I was watching Cooking Channel, “Food(ography)”.
Mo Rocca was cooking paella with a lovely Filipino lady.
I saw she was seasoning with fish sauce, use chicken and sausage instead seafood, add turmeric instead saffron. Wow, I’ve never seen like that before!
What a clever idea!!!
I knew that Philippines has lots of influence from Spain, but I didn’t know they have their own version of paella!
No my Filipino friends told me, ever, about it!!
What a discover!
This is why I love to watching Cooking Channel and Food Network! hehe.
Next day, I couldn’t stand without trying Filipino Paella, so I started work on it.

I seasoned with fish sauce and add turmeric instead saffron as the Filipino lady did on TV,
Otherwise, I created it.
I started with smoked pork jar for grease the pan instead using oil.
I added chicken thighs, shrimp, mussels, roasted tomatoes, mushroom, onion, garlic ginger and lemongrass.
I used long grain rice and chicken stock also.
It was so flavorful and delicious!!!!
Jacob never had paella before, but he liked his first Filipino paella though! hehe.
It’s different, looks entertaining, lots of food and easy to make!
What a perfect dinner menu with friends and family at home!!
I definitely make it again!!
(And I have to measure next time so I can give you guys the recipe!! hehe.)
