We had a big party at our home, my step daughter’s early birthday party.
She won’t be with us on actual her birthday so we decided to have a party for her before she leaves.
She invited everybody that she knows here, (Even though adults, lol) and we had a blessed time!!
And of course, my part of party was “Cooking party food”! lol
Trinity and Jacob did all the cleaning and decorating the house, while I was cooking for the party.
Team work! Right? ^-^
All of the menu she picked that she wanted to have for her birthday party and it started from this her grandma’s green bean casserole.
She said she has to have this green bean casserole, she even gave up bulgogi! lol
I didn’t know how to make this grandma’s green bean casserole so Trinity and Jacob made it together.
Honestly it’s not my type of vegetables but it’s very simple ingredients and very easy to make.
2 caned french green beans, 2 cans cream of mushrooms, 1 container french fried onions.
That’s it!
You mix all ingredients except 1/2 container of french fried onions and place on a baking dish.
Top with remaining 1/2 container of french fried onions and bake 350 degrees for 25 to 30 minutes.
Yes, I made mac&cheese too.
I tried so hard to make it tastes like the mac&cheese that how kids are remember.
And resort? Success! lol
I start from equal amount of butter and flour to make roux, then add cream and water (I didn’t have milk).
And simmer for a while until it ticken, and that is bechamel sauce, or white sauce.
I season my bechamel sauce with salt, freshly grounded pepper, freshly grounded nutmeg and hint of sugar.
From here whatever cheese you put it in, it will be your own cheesy sauce!
For this kids mac&cheese I put mild cheddar, mozzarella, and american.
They LOVED it! ^-^

It wasn’t her request menu but I thought it would nice to have it for adults.
1 caned chick peas, a couple tablespoons of tahini (Sesame paste), fresh lemon juice from 1/2 of lemon, salt, pepper and olive oil. Sometimes roasted garlic or pepper for extra flavor.
Caesar salad.
It was so funny when Trinity found out that anchovy is one of main ingredients of caesar salad dressing.
Because she used to say she doesn’t like anchovy at all.
I think she does, she just doesn’t know yet. lolol

My house seasoned BBQ chicken.
I decided to serve sauce separately because there will be lots of kids and some kids don’t like any sauce on their chicken. And it was a smart idea! ^-^
My house seasoning is very simple, it’s just mixture of salt, pepper, garlic powder and onion powder.
I prepared 3 different kind sauces.
From left to right,
Homemade BBQ Sauce, White Ranch-like Sauce and Honey Sriracha.
Homemade BBQ sauce includes ketchup, Worcestershire sauce, dark soy sauce, white vinegar, molasses, brown sugar, salt, pepper, garlic powder, onion powder, mustard powder and paprika.
Oh, and liquid smoke.
When I was tasting the sauce, I wasn’t sure about it. But when I had with chicken? UMUMUM!!
DELICIOUS~!! I was so proud of myself! lol
The white sauce is mixture of mayo, lemon, salt and black pepper.
I tasted it and it didn’t taste so good so I added a little bit of sugar, and then it turned out even worse!
So I called my hubby and asked him help.
He tasted the sauce and said “It’s pretty good!”
I was like WHAT?!
He said it tastes like ranch, and that is why I probably thought it tastes ugly..
Because I don’t like ranch…
But we figured that kids like ranch so decided to serve it! lol
Honey Sriracha, was the hit to adult at this party.

I was going to make mini sugar cookie cups filled with whipped cream and fruits.
I couldn’t buy sugar cookie dough, and I already behind than my plan, I didn’t have time to make sugar cookie dough from scratch. I had to come up with something similar and quicker.
Because we can’t have a party without a dessert, or two! lol
So I got puff pastry and baked them.
As you can see, I even tried to make mini cups with puff pastry. But they were so fat, couldn’t make it. lol
But the end of the day, it was all good.
Everybody loved that simple and light dessert. I was so happy! ^-^

We had a great time especially Trinity.
She was getting a bit stressed before the party, but everything went so well, we were so happy.
