As you know, Jamie Olive is my mentor.
I love his style, how he treat and respect the ingredients, and so much passionate about cooking.
One of my favorite his cook books is “Jamie at Home”
I watched the show first before I bought the book, and I just fell in love with him, again.
I felt that he finally shows people what he really wants to show, with out fear.
So natural, loved and brilliant.
This is one of his recipes that showing who he is and what he does;
“Crispy and sticky chicken thighs
with squashed new potatoes and tomatoes”
Rustic, delicious but simple steps and simple ingredients.
It’s one of my husbands favorite so I made it again for him. 🙂
Pan-fry the chicken thighs, boil the potatoes and tomatoes.
Then bash up fresh oregano leaves with extra virgin olive oil, a good splash of red wine vinegar (This is what the book says!), a pinch of salt and pepper.
This is how it looks like, right before bash up.
Toss everything together carefully.
Isn’t it beautiful?
After toss all together then you bake in the oven until golden.
It looks even better after baked!!!

It is very simple recipe,
but you can taste how much Jamie loves and respects food and every single ingredients.
Everything meant to be together in the dish, you can’t miss.
