Quick Friday Night
Well, it’s Friday and staying at work late doesn’t really help my culinary experiment. It’s been a long week and I knew I would run into this type of situation so I was prepared.
Is this following Seonkyoung’s recipes or guidance? Not at all, but at least I’m cooking better food for myself instead of doing what I normally would do. I’d usually go get take out BBQ or fast food. So these grilled chicken mozzarella raviolis looked like a better option for these quick dinner nights. I found them in the fresh pasta section of the store.
Remember the marinara from the pizza? There was more than enough for this dish as well, and there’s still a little left over. Don’t worry, I’ll make sure I eat it with something before it goes bad so I don’t waste those good tomatoes.
Yes, the marinara would be great with the ravioli by it self, but I needed some more freshness. So I sauteed some spinach with olive oil and salt. If you haven’t noticed by now, I LOVE spinach. I’m really not sure why it gets such a bad wrap. It tastes so good and it’s great for your health.
After the spinach is done, it gets to go swim in that already delicious marinara.
I let the sauce heat back up and simmer for about 10 to 12 minutes. The ravioli takes less than 5 minutes in boiling water, then drain. Now, the ravioli does come with a Parmesan/herb mix to sprinkle over the top, but I used some fresh Parmesan to grate over the top instead. So much better I think.
There you have it! This was quick, easy and I was able to use some of my own fresh ingredients. The whole process took around 15 minutes and I was able to sit down to a nice meal and a cold beer after a long week at the job.

Nice move on making something you already had ingredients for! No guidance needed and you did a great job making it a healthy dinner choice.
Looks fabulous and fresh cheese is always better. Less preservatives.
