If you like spring rolls, or lumpia (Filipino spring roll),
you probably had sweet and sour sauce or sweet chili sauce as a dipping sauce.
But today, I’m not talking about the spring rolls.
I’m talking about the dipping sauce.
It is such a delicious sauce that you can use more than a dipping sauce.
I and my husband Jacob prefer the sweet chili sauce because we like to have a little kick! lol
The other night Jacob asked me to make him “Something” that include sausage and tomato.
I have no idea where his thought come from but I said I will try.
I didn’t want to cook obvious thing, so I looked up the refrigerator,
and came up with this Asian but no Asian food. lol
Ingredients
2 Tablespoons extra virgin olive oil
2 small red or Yukon potatoes, thick sliced (About 1cup)
1/2 medium size yellow onion cut into1inch dices
3 links hot or spicy flavored sausage
10 cherry tomatoes, blenched and peeled
1/2 cup snow peas, tips pulled off and strings removed
4 pickled pepperoncini peppers
Pinch of black pepper
1/4 cup sweet chili sauce
Directions
Prick the pepperoncini pepper with a sharp knife, set a side.
Heat the oil in large skillet over medium high.
Add potato, cook 2 minutes each side until golden brown, then add onion and sausage.
When onion is soft and sausage cooked nicely and golden,
Add tomato, snow peas and pickled pepperoncini.
Cook 3 minutes or until snow peas cooked, Stir occasionally.
Add black pepper and sweet chili sauce and combine well.
Serve on toasted breads.

I served with toasted ciabatta.
Because I love rustic breads than regular no-fun soft bread.
Sweet, tangy, lots of textures and very little bit of kick from the sauce! 🙂
You don’t need to add any salt because sausage, pepperoncini are already salty.
And the sauce will give you the enough seasoning that you need.

um yum!!! I have some of that sauce at home and I’m going to have to try that!!! I don’t know why I never thought of that before!
