- 11 oz well-ripped banana (approximately 4 bananas)
- 1/4 cup plant-based milk
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- pinch of salt
- 2 tbsp sugar (depending on how sweet your banana is)
- 1/2 cup all-purpose flour
- 1 tbsp baking powder
- Coconut oil
Instructions
- Smash bananas with a fork in a medium-large mixing bowl, it will be about 1 1/3 cup. Add in vanilla, plant-based milk, salt, and sugar, and mix well.
- Add in flour, baking powder, and cinnamon and mix well until smooth.
- Heat a large skillet or griddle over medium-low to medium heat, add 2 tsp coconut oil. Pour or scoop batter onto a skillet, about 1/3 cup for each pancake. Brown and crispy on both sides, about 3 to 4 minutes
and serve imminently. This recipe will make 6 pancakes.
