Sunday, feels like I’ve got to eat some brunch.
Especially watching chefs cooking brunch all morning from Food Network and Cooking Channel. lol
I had so many ideas to make brunch, but I didn’t want to go to a store. lol I had to make our brunch with what I have in my refrigerator.
So, I came with this brunch pizza! ^^
Preheat oven 400 degree.
I thinly julienne 2 yukon gold potato and 1/4 medium size yellow onion.
Season with salt, set aside for 5 minutes, then I squeezed all the excess water from potato and onion. So it will be very nice and crispy!
Heat a large cast iron pan or oven prove pan over medium high heat, add 2 Tablespoons cooking oil and add potato and onion mixture. Spread evenly like a pizza dough. When you see golden brown pieces around the edge, about 5 to 10 minutes after(depending which pan you are using), carefully flip it over.
Meanwhile cooking potato mixture, stir-fry 4 slices bacon (cut into bite size), handful baby spinach, handful cherry tomatoes, and 1 shiitake mushroom for 3 minutes. Just so they will soften.
Pour the bacon and vege mixture top of the golden brown potato dough(after flipped over).
Make some room between the vegetables and crack 3 eggs put on the top, season each eggs with salt and pepper. Sprinkle with chopped green onion. Put the pan on the top rack of the oven, then turn on the broiler. Cook 5 minutes or until eggs are cooked through as you desired and bottom of potatoes are nice golden brown and crunch!
And there you have it! Delicious brunch pizza at home!
It would be great pairing with a glass of spicy and tomatoey bloody mary!

You can choose the vegetables and meat for your taste!
