  • 5 oz. Spaghetti
  • 2 Slices thick cut bacon, cut into bite sizes
  • 1 Clove garlic, chopped (Optional)
  • 1 Organic or free range egg yolk (The most fresh egg possible)
  • 1/2 cup Pecorino
  • 1 tsp. Black pepper

With Twist

  • 5 oz. Spaghetti
  • 2 Slices thick cut bacon, cut into bite sizes
  • 1 Clove garlic, chopped
  • 1 Organic or free range egg yolk (The most fresh egg possible)
  • 1/2 cup Parmigiano
  • 1 tsp. Parsley
  • 1/2 tsp. Black pepper


Instructions

  1. Cook spaghetti al dente following the directions of the package you are using.

  2. Meanwhile, cook bacon until crispy, about 7 to 8 minutes over medium high heat. Add chopped garlic and sauté for 1 minute and remove from heat. Cool it for 3 to 5 minutes.

  3. In a large mixing bowl, combine egg yolk, cheese and bacon and garlic mixture. Mix with a spoon. By now, your pasta should be cooked perfectly al dente; add cooked pasta into cheese mixture and toss everything together. Egg will cook by the hot pasta. If the texture is too thick and not mixing well, add a couple tablespoons of past water to thin it out.
