Ingredients

Units Scale

For Pork

  • 10 oz mozzarella cheese, cut into 8 of 2” long, 1” thick pieces
  • 1 lb boneless pork loin, 8 of 2 oz pieces
  • salt & pepper

For Panko 

  • 3 tbsp avocado oil or any cooking oil
  • 3 cups panko bread crumbs

For Egg Mixture

  • 2 eggs
  • 2 tbsp all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp pepper


Instructions

  1. Place a piece of pork loin in between parchment paper or plastic wrap. With a meat tenderizer or heavy saucepan, pound pork to flatten to 1/8” thin. Repeat with rest of pork loin. 
  2. Season each piece of pork loin with a pinch of salt and pepper and lay a piece of cheese on top of pork. Roll a side closest to you and fold right and left sides toward center and continue rolling until it’s closed. Wrap tightly with a piece of plastic wrap so pork will keep its form. Place in a freezer for 15 to 30 minutes. 
  3. Heat a large skillet over medium high heat. Add oil and breadcrumbs. Toast breadcrumbs until beautifully golden brown, about 10 to 12 minutes. Stir frequently. Set aside. 
  4. Beat egg with flour, salt and pepper and set aside.
  5. Preheat air fryer to 360°F 
    Unwrap cheese tonkatsu and dip in egg mixture. Coat it evenly then place on toasted breadcrumbs. Coat evenly with bread crumbs by slightly pressing down breadcurmbs on surface of pork. Place cheese tonkatsu into a heated air fryer, fry for 18 to 20 minutes.
  6. Serve cheese tonkatsu with your favorite dipping sauce. Tonkatsu sauce, ketchup, steak sauce or BBQ sauce is great. I also like to serve with warm steamed rice, thinly sliced cabbage salad and miso soup for a completed meal! Enjoy!
