We traveled all last week from TX to LA.
And when we were on our way home, we decided to try Louisiana style “Boudin”.
What we got was Cajun seasoning, pork and rice.
Oh, man, it was so spicy and so flavorful!! DELISH!!
We bought smoked and fresh.
When we came back home, I made this “Grits with Pork Boudin and Sunny Side Up”.
I knew the strong flavor boudin will goes really well with smooth grits and molten like sunny side up egg. And I was right! We loved it!!!
I made as breakfast for Jacob and myself.
So cheap, simple and easy to make, what can I ask for more?!

Mix it all together, it was heavenly. I mean, really, heavenly.
I made grits with only chicken stock, no cream, milk or half and half. Because I want the egg yolk to make this dish creamy and saucy. ^^

My all time favorite breakfast is eggs benedict. But I really like it when my mom makes me huevos rancheros or chilaquilles. Sooo good and always much better when mom makes it.
OMG, I love chilaquilles for breakfast too!!! You are right, mamma’s meal is alwayas better somehow!
