- 1 slice red beet
- 2 cups water
- 1 1/2 cup short/medium grain white rice, washed & drained
Instructions
- Combine Chija fruits and water in a measuring cup and let it sit for overnight.
- Place rice into a pot and pour chija infused water but not fruits.
- Cover, bring it to a boil over high/medium-high heat, stir when it’s boiling. Cover back on and reduce heat to low. Simmer for 45 minutes for brown rice /10 minutes for white rice then remove from heat and let it sit for 10 minutes. You can also use rice cooker if you have one. Fluff up rice with a rice spatula and enjoy as normal rice!
