I just wanted to share my real quick Thai Drunken Noodles with you all!!
I made with pork and shrimp, just because I had to use them before it gets too late!
I made sauce first.
It’s 1 Tbs. Thai sweet soy sauce, 1 Tbs. fish sauce, 1 Tbs. rice vinegar, 2 Tbs. Sempio’s hot chili hyangshin sauce and 2 fresh Thai chilies.
If you don’t have Sempio’s hot chili hyangshin sauce just add 2 Tbs. regular soy sauce, extra Thai chili, 1 tsp. palm sugar or brown sugar, chopped garlic and ginger.
Mix it well.
Because Sempio’s hot chili hyangshin sauce has all the garlic and ginger flavor I didn’t have to do all the work! YAY!
This is the rice noodles I used.
When I went my local Thai restaurant, I asked them what’s in their drunken noodles?
Because it was so delicious!
And they told me all the seasoning part, how it should taste like and the huge secret I’m about to share with you all right now.
Other Thai noodle dishes can be used dried rice noodles but drunken noodle got to be used fresh noodles. It makes a huge difference, they said.

So when I went Asian store, I got this fresh rice noodles(previously frozen), and made drunken noodles at home! <3
It’s just wide paper shape so I had to cut into wide noodle shapes. About 1 1/4″ wide.
I forgot pictures of vegetables, but cut up onion, bell pepper and eggplant(I just had it! So I added!).
Everything is ready to go so let’s get start cooking!
Heat up a wok really really high heat and add cooking oil, swirl to coat; add sliced pork.
Stir fry for a couple minutes or until pork’s cook through about 3/4, and nice golden brown.
Don’t cook too long or fully cook the pork in this process, then you gonna end up with dried sorry @$$ pork in your drunken noodles!
Add vegetables and stir-fry for 45 seconds, then add shrimp if you wish. I did!
Stir fry until shrimp cooked 1/2 way through, it will takes about 1 minute.
Add fresh rice noodles and the sauce we made earlier. Stir fry until noodles gets soft and fully cooked.
Add lots of fresh Thai basil leaves! In this case, I added some mint and cilantro because I didn’t have enough Thai basil. But sure it was freaking great idea, so I will keep making my drunken noodles this way!!!
Put on a plate and TARRAAANN~

I like my drunken noodles more drier than water sauce, almost like stew… It’s just my taste!
I loved egg plant in there, but not sure whole shrimp like that. lol
It was kinda annoying, trying to eat noodles with chopsticks and peel shrimp all same time… next time I’ll just clean up the shrimp before I add! 🙂
Drunken noodles is one of the delicious Thai foods that easily made at home!
