Easy Korean Sesame Noodles Classic & Spicy

Classic Version (1 serving)

  • 1 portion of soba noodles
  • 1 1/2 tbsp tsuyu, soup seasoning sauce
  • 1 tbsp Korean wild sesame oil (deul-gireum) or good-quality toasted sesame oil
  • 1 green onion or chive, chopped
  • 1 tsp toasted sesame seeds, grind
  • 1 sheet of toasted seaweed, crushed (optional)

Spicy Version (1 serving)

  • 1 portion soba noodles
  • 1 1/2 tbsp tsuyu, soup seasoning sauce
  • 1 tbsp Chili oil or Lao Gan Ma
  • 1 green onion or chive, chopped
  • 1 tsp toasted sesame seeds, grind
  • A few slices of red chili, optional

Instructions

  1. Bring a large pot of water to a boil and cook the soba noodles according to the package instructions.
  2. While the noodles are cooking, in a serving bowl, combine the tsuyu and either Korean wild sesame oil or chili oil, depending on your preference. Also, chop the green onion and slice the chili if using.
  3. Drain the cooked soba noodles and rinse them under cold water to remove excess starch and stop the cooking process. Ensure they are thoroughly drained. Add the drained soba noodles to the bowl with the sauce mixture and mix well to coat the noodles evenly.
  4. Top the noodles with the chopped green onion, ground sesame seeds, and, optionally, the sliced chili or crushed toasted seaweed. Enjoy!
