Description

Ingredients

  • 12 oz flat wings, cut in half lengthwise
  • 4 tbsp shio koji
  • 1 tsp grated ginger or garlic (optional)
  • Potato starch or cornstarch for dusting (optional)
  • Frying oil (vegetable, sunflower, grapeseeds, rice or peanut oil)
  • To serve: shredded cabbage, lemon wedges, and mayonnaise

Instructions

  1. Marinate wings with shio koji and your choice of garlic or ginger for at least 2 hours, or overnight for deeper flavor.
  2. Dust lightly with potato starch or cornstarch. (You can skip this step if you prefer a lighter version.)
  3. Heat a skillet over medium heat, covering the bottom with oil.
  4. Fry wings for 4–5 minutes per side until golden brown and cooked through. Total cooking time: 8–10 minutes.
  5. Serve hot with shredded cabbage, lemon wedges, and a side of mayonnaise.
