Make perfectly crispy and juicy shio koji wings at home! This easy Japanese recipe uses fermented shio koji for tender chicken and deep umami flavor.

- 12 oz flat wings, cut in half lengthwise
- 4 tbsp shio koji
- 1 tsp grated ginger or garlic (optional)
- Potato starch or cornstarch for dusting (optional)
- Frying oil (vegetable, sunflower, grapeseeds, rice or peanut oil)
- To serve: shredded cabbage, lemon wedges, and mayonnaise
Instructions
- Marinate wings with shio koji and your choice of garlic or ginger for at least 2 hours, or overnight for deeper flavor.
- Dust lightly with potato starch or cornstarch. (You can skip this step if you prefer a lighter version.)
- Heat a skillet over medium heat, covering the bottom with oil.
- Fry wings for 4–5 minutes per side until golden brown and cooked through. Total cooking time: 8–10 minutes.
- Serve hot with shredded cabbage, lemon wedges, and a side of mayonnaise.
