Y’all LOVE my easy ramen recipes, so here’s another one! This time, I kept it super simple with ingredients most of us already have—soy sauce, garlic, and chicken. It’s not a soupy ramen, but more like a stir-fried style… without actually stir-frying. Sounds weird? Just wait—it totally makes sense once you taste it!

This one’s perfect for a quick dinner or even an easy brunch or lunch. You can always toss in more veggies—just swap some of the noodles out!

Let’s get started!

First things first—bring a pot of water to a boil. Trust me, this recipe is so quick that by the time your noodles are done cooking, everything else will be ready too!
Meanwhile, cut 2 chicken thighs (skin on if you like!) into bite-sized pieces. Want to switch it up with shrimp or tofu? Go for it—this recipe is super flexible!



In a mixing bowl, combine 3 tablespoons soy sauce, 2 tablespoons mirin, 2 tablespoons sugar, 1/4 cup chicken stock, and 4 cloves of garlic. You can either finely chop the garlic or grate it in like I did for extra punch. Set the sauce aside.
While you’re at it, chop up some green onions and get your ramen egg ready—these will be your finishing touches!

Heat a medium-sized pot over medium-high heat and add 1 tablespoon of cooking oil. Swirl the oil to coat the bottom. If you’re using a stainless steel pot like I am, don’t skip the next step!
Once the oil is shimmering, reduce the heat to low and let it sit for about 3 minutes. This helps the pot develop a natural non-stick surface by bonding with the oil (kind of like seasoning a pan). Then, turn the heat back up to medium-high to get it nice and hot for cooking.



Add the chicken pieces, skin side down, into the hot pot. Let them sear undisturbed for about 5 minutes, or until the skin is golden and crispy. Flip and cook the other side for another 2 to 3 minutes, or until the chicken is fully cooked through.
If there’s too much oil in the pot, gently blot the excess with a paper towel. You can skip this step if you’re using skinless chicken, as it’ll release less fat.




Pour the sauce mixture into the pot with the chicken and bring it to a simmer, allowing the flavors to come together.
Meanwhile, drop your ramen noodles—whether fresh, frozen, or instant—into the pot of boiling water. Cook according to the package instructions. Once the noodles are ready, drain well and add them straight into the simmering chicken and sauce. Toss to coat evenly.


Drizzle sesame oil on top of noodles. Toss noodles until they are coated evenly with sauce.



Transfer everything to a serving bowl and top with chopped green onions, a ramen egg, and a sheet of nori. Finally, crack some fresh black pepper over the top—it really brings the whole dish together!
If you’re into spicy food, a drizzle of sriracha takes this soy garlic chicken ramen to the next level. Highly recommend!

Ingredients
For Sauce
- 3 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp sugar
- 1/4 cup chicken stock
- 4 cloves garlic, grated
- 1 tbsp cooking oil (I used avocado oil)
- 2 skin-on chicken thighs, cut into bite sizes
- 2 portions ramen noodles
- 1 tbsp sesame oil
- 2 green onions, chopped
- 1 ramen egg
- toasted seaweed (gim/nori)
- 1/4 tsp black pepper
Instructions
- Bring a pot of water to boil.
Combine all ingredients for sauce in a mixing bowl and set aside. - Heat a medium size pot over medium high heat, add cooking oil and swirl to coat. If you are using stainless pot, go ahead and follow next step.
- When oil is shimmering, reduce heat to low & let it sit for 3 minutes. Increase heat to medium high to preheat pot. (this way we can insure that chicken is not stick to bottom of pot.)
- Add chicken, skin side down. Sear chicken 5 minutes or until skins are golden brown. Flip over, cook 2 to 3 minutes or until chicken is fully cooked. Tap out excess oil with paper towel as needed.
- Pour sauce mixture and bring it to simmer. Drop ramen noodles into boiling water. Cook noodles by following directions of package you’re using. Drain and add into chicken.
- Drizzle sesame oil on top of noodles. Toss noodles until they are coated evenly with sauce. Transfer to a serving bowl and garnish with green onions, ramen egg and nori. Finally, sprinkle black pepper right on top and it’s done! Enjoy!

Is this good for meal prep? Noodles doesn’t get soggy if I make 5 meals and put it in fridge?
I wouldn’t recommend it, the noodle would definitely get soggy. This would taste the best when made fresh.
Can you use substitute mirin with something else?
white balsam vinegar i heard is ok or something like lemon/lime
1:1 sub with rice vinegar but add 1/4-1/2 tsp of brown sugar!
Hi Seonkyoung! I made this recipe tonight with fresh ramen noodles. It was super FLAVORFUL, like a flavor bomb of garlic. The thigh meat chicken has super crispy and flavorful skin, and I cooked the sauce down a bit in the pan with a little bit of chicken oil and the browned bits. That being said, it was also a bit too rich for me! Garlic lovers and flavor bomb lovers may like it as it is, I’m a little sensitive. I think it may be better to just add a little bit of the garlic sauce to taste. My sister even made the sauce into a soup by adding more water and she loved it. Mirin can be substituted with any cooking alcohol or any rice wines as well.
