I just wanted share my quick grilled vegetable idea with you all! 🙂 My hubby LOVES grill anything and everything, and lately he is so into grilling zucchini. So I wanted to kinda bump up his zucchini to more variety vegetables and my kinda touch in it. I didn’t bumped up his zucchini to prove I’m better, because I just got some idea and wanted to try. 😉 How he does his zucchini is just perfect and delicious that I can eat everyday!
So to grill some vegetables, we need…… veges!!! lol 😉
I prepare zucchini, of course, red onion, red bell and eggplant! Ummmm~ all of them look so fresh, colorful and tasty!!!
How my hubby did was just toss in extra virgin olive oil, sat and pepper. Simple but SO-GOOD~!!
I wanted try with some little bit more kicks. So I made this flavorful oil that will goes over the hot grilled vegetables! It’s mixture of…
1/4 cup Extra virgin olive oil, 1 clove garlic chopped, 1/2 tsp red flakes, 1 tsp herb de provence, pinch of salt and pepper.
I add all the ingredients in a small sauce pan; over low heat, I let it infuses all the flavor into the oil about 10 minutes.
Meanwhile, my hubby was grilling all the vegetables! Looks yummy~!! ^__^
The red bell pepper, I place into a plastic container with lid on and then 5 minutes later I pilled all the skin off from meat. You guys should try, it’s really easy and much more yummy than store bought roasted pepper!!
And TARRAAAAN~~ this is the grill ed vegetables looks like after tossed in the flavored oil!! Oh, I kept the oil hot and pulled over to hot veges so it will be still nice and warm while we are eating it! 🙂
We ate this with grilled chicken and it was so simple yet, yummy yummy chicken dinner!!! 😉
