The other day I shopped at Costco, and found “French green beans”.
Not sure what is huge difference between regular green beans and French green beans, there than it’s more thiner and tenter.. but I wanted to give a try so grabbed one home!

What you see in the pic is how they pack in a bag. So it was very easy to take out and wash!

I’ve been keep thinking how I wanted to eat this green beans while in bed falling asleep.
Yes, it’s very normal for me to falling asleep while thinking about what I’m gonna eat the next day. LOL!!!
When I woke up in the morning, I suddenly wanted to have breakfast sausage, green beans and over easy egg.
But then quickly realized I didn’t have breakfast sausage… 🙁
Oh, wait, I do have ground turkey though!
So deiced to whoop turkey breakfast sausage- shake it shake it!
You can find a lot of breakfast sausage recipes by google.
In my breakfast sausage, it has salt, pepper, sage, clove, sugar and a lot of red flakes.
I meant, A LOT of red flakes!

So, the ingredients are ready!
Oh, don’t forget to crush & roughly chop some garlic as well!
Cook breakfast sausage in a skillet until nice golden, then add garlic.
Add some oil if your sausage is lean as mine. This turkey has no fat at all!! 😂
Then goes green beans…
Pour some water so it will steam the green beans and cook fully & evenly.
It will take a couple of minutes, so meanwhile make some fried egg or whatever egg you prefer! Poached egg or soft boiled egg would be great in this dish!

Egg is protein and as any other protein, it tastes the best when it cooked on high heat.
That’s why you should boil the eggs from boiling water for the best result, not form cold water.
While egg is frying, the water probably all evaporated.
Then it’s ready to serve!
This amount can serve 2, but as you know me… I killed it by myself. LOL!
Of course, I added some extra red flakes and black pepper for more kick & pretty looking for the pic! 😉

Description
Ingredients
- 4 oz breakfast sausage
- 8 to 10 oz green beans, trimmed
- 1/3 cup water
- 1 or 2 eggs
- red flakes to taste
Instructions
- Heat a large skillet or a wok over medium high heat; add sausage and cook until golden brown. Keep break it down with wooden spoon to be fine pieces.
- Add green beans and water. Cook until water has completely evaporated, about 3 to 4 minutes. Meanwhile fry egg.
- Place breakfast sausage and green bean stir fry on a plate and top with egg. Sprinkle some red flakes and black pepper to taste. Enjoy!
