Smoked Salmon Sushi Bowl

by Seonkyoung
Hi guys~!
The city I live is very hard to get fresh seafood product.
So when I want to eat some salmon, I get smoked or frozen.
I prefer smoked salmon than frozen one, just because how I like to eat my salmon. RAW.
This is how I eat my smoked salmon MOSTLY at home.
I don’t think about fresh salmon when I’m eating this! lol
Because the smokiness and saltiness of smoked salmon makes this dish special!!
The best thing about this dish is you don’t have a pressure of “I have to eat this salmon in my refrigerator when it’s fresh, like today, right now!!!!” lol

I made sushi rice and top with smoked salmon, sliced cucumber, sliced radish, blenched okra, hard boiled egg, shiso (Japanese perilla leaf – herb, similar looking but totally different flavor than Korean perilla. Click the link to read more about Shiso http://en.wikipedia.org/wiki/Shiso) and chopped umeboshi (Japanese pickled plum – Ume. Click the link to read more about Umeboshi http://en.wikipedia.org/wiki/Umeboshi).

Serve with ponzu sauce (Citrus based soy sauce. Click the link to read more about Ponzu http://en.wikipedia.org/wiki/Ponzu) and yuzukosho (Spicy and citrus Japanese seasoning) or wasabi.

You can dip the toppings in to ponzu sauce or pour the ponzu sauce to the bowl. 🙂

Oh, it was DELICIOUS!!!

Perfect for summer time lunch! 🙂  If you like sushi, smoked salmon and refreshing food, you’ve got to try this!!

And please let me know if you try it! OK? 😀

I hope all of you have a fun and great weekend, and keep cooking~!!

I will have to try this. This summer I learned about somen noodles and how to make things that are refreshing to have during the summer heat. I will surely try this. Thanks!
