Hi guys, I wish you all health and safe life!!!
We are definitely experiencing a tough time and I’m optimistic that we can get through this. 💪🏽
Today I’m sharing Chinese cucumber salad recipe. You probably had this at your local Chinese restaurant and always wondered how to make this simple yet delicious cucumber salad at home. Today, I will share the secret!
Before jump into Chinese cucumber salad recipe, check out my Korean cucumber salad recipes too!
When I had this salad in Taiwan, it was so refreshing, crunch and just a perfect side dish for other flavorful dishes I was eating with. It’s also mild, not spicy at all, so I really wanted to share the recipe with you so your kiddos and enjoy too!
First, let’s make the dressing. Super duper easy.
Whisk soy sauce, vinegar, sugar, salt and sesame oil until sugar has dissolved. When sugar and sesame oil is all combined completely, the texture of the dressing should be a bit thicken.
The soy sauce I use for most of my Chinese recipes is this Pearl River Bridge brand Superior Light Soy Sauce .
It is a great quality all-purpose soy sauce, I definitely recommend you to have one in your pantry!
Mix in finely chopped garlic and shallot.
I accidentally added too much shallot. It was still super delicious, but if you want to reduce amount of the shallot, go ahead and do so. 1 small shallot is perfect for this recipe for my taste, so adjust to your taste.
Ok, here is the fun part of this cucumber salad recipe! Smashing the cucumber!
Cut the ends of cucumbers and smash them down with a side (wide) part of knife a few times until they are broken. If you don’t feel comfortable using knife, you could use rolling pin, a sauce pan or flat part of meat tenderizer.
Then cut them into 1-inch long pieces. Remove some big seeds if there’s any to prevent from watery salad.
Add cucumber into the dressing mix everything together.
You can serve it immediately or keep in a refrigerator for a couple of hours before serve.

English cucumber ok too?
I don’t see why not!
How long will these safely keep in the fridge? I’d like to make a big batch at once!
I love this recipe! Makes cucumbers exciting instead of just the crunch in a salad or a green topping on a dish.
Great recipe, used half the sugar and an English cucumber. Will definitely make again.
PERFECTION !!!! One of our favorite side dish ! Always a hit, even for the kids !!!!!!
So glad I could help!
This is delicious – my new favorite cucumber recipe! My whole family loves it, but my five-year old especially LOVES it because her job is to smash the cucumbers (with a rolling pin). A new staple side for us!
