Strawberry Makgeolli!

Strawberry Makgeolli for this strawberry season! Strawberries are juicy, have a beautiful, delicious strawberry aroma, and taste so sweet!

I made strawberry Makgeolli, a Korean unfiltered rice wine with strawberries! My favorite Makgeolli is the Slow Village brand because they make Makgeolli with very clean ingredients: only water, rice, and Nuruk (Korean traditional yeast).

But you don’t have to use this brand. Any Makgeolli you can find at your local Korean grocery stores, even your homemade one, will work perfectly!

How are 생막걸리 (unpasteurized makgeolli) and 일반막걸리 (pasteurized makgeolli) different?

In Korea, we are lucky to have access to “Fresh” makgeolli, which we call Saeng Makgeolli 생막걸리.

The main difference between 생막걸리 (unpasteurized makgeolli) and 일반 막걸리 (pasteurized makgeolli) is whether the yeast culture and lactobacillus bacteria are alive during fermentation.

Fresh Makgeolli contains live cultures, while pasteurized Makgeolli has a smoother taste and longer shelf life due to pasteurization. This affects taste, nutrition, and shelf life, with pasteurized Makgeolli lasting up to a year at room temperature and Fresh Makgeolli having a shorter shelf life of 3 days to 1 month. Both offer unique benefits, such as digestive aid from Fresh Makgeolli’s live cultures and the convenience of long-term storage with Pasteurized Makgeolli.

Strawberry Makgeolli Ingredients

  • 4 bottles of 750 ml unflavored Makgeolli
  • 2 lb fresh strawberries; blend 2 cups of strawberries in a blender and keep the rest whole or cut them in halves

Since Strawberry Makgeolli is fruity and semi-sweet, it’s great by itself already! If you want to, you can serve strawberry Makgeolli with any drinking food! Sashimi and Korean corn cheese could be a good choice. Or something firey and spicy would pair well!

Notes

You can prepare strawberry puree and whole strawberries ahead of time, but don’t mix them ahead! It’s best when they’re mixed right before serving!
