I just came up with this AMAZING Pork Rib Noodle Soup recipe last week and had to share ASAP with you all!!
My pork rib noodle soup is SUPER EASY to make, simple yet SUPER YUMMY!!!
Cut pork riblets into single pieces along with the bones. You can part boil the ribs if you prefer, which is just blench in boiling water for 2 minutes and rinse under cold water. This will make the soup more clean look and flavor, but not necessary for this recipe.
Combine garlic, ginger, pepper corn, baby leaves and licorice in a large tea filter bag so we can remove easily after the soup is done.
Place the pork riblets, the aroma bag, rock sugar, leek, shiitake mushrooms, water, chicken broth, shaoxing wine and soy sauce in a large pot (9-Qt / 8.5L pot).
You can find shaoxing wine easily at Chinese/Asian grocery stores and it’s much cheaper to buy from store. Also, I highly recommend to use Chinese premium light soy sauce. Light soy sauce in this case means, light in color, not light in sodium.
Cover, bring it to boil over high heat and skim the scums on the surface of the soup with a fine skimmer, about 5 to 10 minutes.
When they soup is clean, cover the pot and reduce heat to medium low and simmer for 1 1/2 hours.
When soup is done boiling, go ahead and remove all the solid ingredients except ribs. Make sure to squeeze the soup as much as possible from the veggies & the bag.
Bring another pot of water to boil, add some salt.
Cut baby bok choy into quarter.
Blanch the bok choy for 1 minute or until your preference tenderness and remove from the boiling water.
In the same pot (skim if needed), cook your choice of noodles by following the package of the noodles you are using.
I used my favorite fresh wheat noodles from my local Asian grocery store, but you could use fresh, frozen or dried wheat noodles.
Drain the noodles and place in a large serving bowl. Arrange streamed bok choy around the noodles then pour the soup and riblets on top of the noodles until the noodles are covered by the soup.
Sprinkle some chopped green onions and cilantro and add 1 to 3 tsp of chili oil with chili flakes right on top to your taste.

For the Soup
- 4 lb pork riblets, baby back ribs or country style pork ribs

- chili oil with chili flakes

can I substitute the licorice for star anise? and also the rock sugar for palm sugar?
Hi, seokyounglongest! Can i cook this in the instant pot or pressure cooker for 1 hour instead? Then simmer the soup back another 20 mins to concentrate the falvours? I have the ingredients so gonna cook this the weekend. Hope u can reply ASAP. Thanks!
I’ve never tried this recipe in an instant pot, however I believe you can cook this with one.
Ok will give it a go thanks! Btw if i don’t have wheat noodles can i use fresh Wonton egg noodles or those thin chinese egg noodles? Or would vermicelli be better?

The soup should be good for about 3 to 4 days but make sure to boil it often.

Why so much sodium? is there any way to make this without so much sodium? It looks very good but I can not tolerate so much sodium Plus it seems many Asian recipes have a lot of sodium in them Why? Do Asian people not have a problem with salt?

This pork rib noodle soup recipe is so good. I used Kikkoman Manjo Aji Mirin as a substitute for Shaoxing wine; it works great, too. Best paired with Vitasoy Lychee Flavor Vita Juice Drink.
