I’m not a sweet tooth, not a big fan of dessert. But in summer time, I need some cool and sweet dessert to cool me down. 🙂
And Korean ice dessert, Patbingsu is the perfect dessert for me to cool down in summer anytime!
Patbingsu, Pat means adzuki beans(Asian red beans), Bing meas ice, Su means water.
Basically Patbingsu is finely shave ice topped with sweet adzuki beans and other toppings – such as fresh fruits, rice cake, cookies, ice cream, syrup, caramel and more…
Personally I love anytypes of Patbingsu, but the best way to enjoy it…. in my opinion, in hot hot summerday right under the sun! lol
What makes my Patbingsu recipe special is my ice. I don’t use ordinary plain water ice. I use sweet milky ice which is shaves like an angel, tastes like a cold cloud.
It’s amazing!
First, you need to learn how to make this pretty looking sweetened adzuki beans.
It’s very easy to do but it’s time consuming. So when you decided to make this, just make as the recipe calls and rest of it, just freeze it and defrost it when you want it!
♥ Sweet Adzuki Beans (Pat) ♥
Ingredients
14 oz. Adzuki beans (You can use regular red beans(I’ve tried it), but trying to find this small Asian red beans. The texture is a big different.)
1 cup sugar (white or brown, whatever you prefer.)?
1/4 cup honey
1/4 teaspoon sea salt
Directions
Wash dried adzuki beans and soak in 8 cups cold water for over night(6 to 10 hours).
Next morning drain soaked beans, place in a large pot and add 4 cups fresh cold water. Over high heat, bring it to boil; when it starts boiling, remove from heat immediately. Drain again. (The first water of adzuki beans might causes your stomach and makes the final product bitter.)
Place once boiled adzuki beans back to a large pot, add 4 cups fresh cold water. Over high heat, bring it to boil then reduce heat to medium and simmer for 30 minutes. Reduce heat to low, simmer for additional 20 minutes, so total 50 minutes cooking. Do not cover while you cooking beans, stir occasionally with a wooden spoon.
Check beans if it’s cooked all the way thought with your finger or by tasting it.
If beans softly cooked, it’s time to season. (Do not add anything into beans before it’s cooked through. It causes horrible texture!)
Add sugar, honey and salt into cooked beans and stir. Increase heat to medium high and soft boil until it thickens, about 5 to 10 minutes. Stir frequently.
Remove from heat, let it cool. Keep it in refrigerator if you are going to finish it in 3 to 5 days, or freeze it and enjoy for 2 months!
While you are making adzuki beans or before, prepare delicious angel sweet milky ice cubes. 😉
♥ Sweet Milky Ice Cubes ♥
Ingredients
2 cups Milk (Whole milk to zero… doesn’t matter at all! You can use soy milk or almond milk, but if it’s sweetened already, omit sugar.)
1/4 cup granulated sugar
Directions
Add milk and sugar in a mixing bowl, whisk until sugar dissolved.
Pour into ice cube container, freeze it overnight.
♥ More Variations ♥
Mocha Ice Cubes: Substitute 1 cup espresso for the 1 cup milk.
Green Tea Ice Cubes: Add 1 Tablespoon matcha powder(Green tea powder).
Chocolate Ice cubes: Substitute 2 cups Chocolate milk for the 2 cups milk and omit the sugar.
Now, everything is prepared, so you are SO ready to make this delicious Korean dessert Patbingsu!!
The milky ice cube recipe is for 2 serving, but if you are eating as a small dessert, it will good for 4 serving.
With this deliciosu milky ice cubes, you can make any kind of patbingsu just changing the toppings.
You can top with only sweet adzuki beans, which is classic and very old fashion. But if you are not a big fan of beans in dessert, you can just omit also. It won’t be Patbingsu any more, it will be just Bingsu.
If you top with fresh straberries, strawberry syrup and strawberry ice cream, then it will be strawberry patbingsu! (Mango works perfect too!)

♥ Classic Old Fashion Patbingsu ♥
Ingredients
2 cups shaved Sweet Milky Ice (Recipe above)
2/3 cup Sweet Adzuki Beans (Recipe above)
2 teaspoons roasted bean powder for taste
2 teaspoons ondensed milk for taste
Directions
Place shaved sweet milky into 2 serving bowls, 1 cup each. Top with sweet adzuki beans, 1/3 cup each.
Serve with roasted bean powder and condensed milk for taste.
Enjoy!
♥ Green Tea Patbingsu ♥
Ingredients
2 cups Shaved Green Tea Ice (Recipe above)
2/3 cup Sweet Adzuki Beans (Recipe Above)
2 Scoops Green tea ice cream
Dark chocolate for garnish
2 teaspoons condensed milk for taste
4 Rolled wafers
Directions
Place shaved green tea ice into 2 serving bowls, 1 cup each. Top with sweet adzuki beans, 1/3 cup each and green tea ice cream.
If you like to, garnish with grated dark chocolate on top, drizzle 1 teaspoon condensed milk on each serving. Serve with rolled wafers and enjoy!
Just writing down this recipe makes me want to eat some right now! Hehe. 😉

I just bought an ice shaving machine and the ice are still crunchy nothing like what I had in Korea.
I can’t wait to try using the milk ice cubes instead, I bet it will be fluffy.

That’s so awesome! 😀 Yes, milk ice shave so much better than regular water ice. Honestly, in Korea they use special ice shaver to shave their ice really nice and fluffy. But we can try our best to make it home!
