Today I’m going to share my Fluffiest Banana Pancakes Vegan.
Before we jump into my Banana Pancakes Vegan recipe, I have lots of things that want to update you guys.
It’s been a while since I uploaded a new recipe, I know!! 😭 Moving and settling down takes a long time…
So, we left Texas last June and arrive in Maui in July. Then the stuff that we shipped from Texas arrived here in August. Then we did a little construction for our guest bedrooms – that took about 2 weeks to finish. Phew 🤪
So here I am finally!! With a new recipe!! WHOOTWHOOT~ I missed you guys so so much and when I was making this recipe video and picture, I realized how much I love what I do and I much I missed doing it!! So thank you so much for being here today, I really appreciate your visit because you are the reason why I’m here!!
We bought this beautiful farmhouse in Maui and we love it more every day! We have 4 Kune Kune pig ladies, 7 chickens, and 9 ducks! Oh, and a stray cat just adopted us 2 days after we got here so… our farm is full of animals! We rescued all the animals who were raised as food. We are going to keep them as pets not food.

BTW, after we moved to this farmhouse in Maui, we are blessed with so much fresh produce! Fresh fruits and veggies are endless in this land and we’ve been in LOVE!! This is exactly how we wanted to live our lives, fresh ingredients from our own land that we took care of. But then we quickly realized that there’s a fruit that produces a whole lot more than others… BANANA!!! We have tons and tons of bananas we can open a spot in a farmer’s market and selling bananas! lol Well, maybe not that much but a lot for just two people. I’ve been freezing them so I can make lots of this banana pancake (the recipe I’m about to share with you!) and banana cakes when our family and friends are come to visit us.
So, I’ve been obsessed with this banana pancake recipe and have been making it almost every morning! 😅 Banana pancake is the only breakfast I want to eat recently other than my banana cake! lol Seriously, my banana pancakes vegan recipe is FULL of bananas, so be ready!
The first thing is first, let’s smash bananas! I’m using this small banana. It might be a mini plantain I don’t know lol Lots of you guys told me it’s cooking banana. It’ soft, sweet and sour. It’s not as sweet as store-bought bananas. Anyways, because they are tiny it’s a bit different measurement. So I give you the weight of the peeled banana, which is 11 oz. It’s approximately 4 bananas.
Smash them with a fork in a medium-large mixing bowl, it will be about 1 1/3 cup.
I personally like chunky bananas for my banana pancake and banana cake. If you like a smoother texture, you can blend it in a blender with other wet ingredients.
Add 1 tsp vanilla, 1/4 cup plant-based milk, a pinch of salt, and 1 to 2 tbsp sugar. I use 3 tbsp sugar for mine for 2 reasons. One, as I mentioned my farm bananas are not as sweet and have a little tangy flavor. Two, I like my banana pancake sweeeeet! lol So start with 1 tbsp sugar and taste it. If that’s enough, that’s all you need and if you want a bit sweeter taste, add one more tablespoon.
Add in 1/2 cup all-purpose flour, 1 tbsp baking powder, and 1/2 tsp cinnamon and mix well until smooth.
I usually do the whole thing with a fork. lol
Heat a large skillet or griddle over medium-low to medium heat, add 2 tsp virgin coconut oil. You can use other oil that you have but I think virgin coconut oil adds a fabulous flavor to this banana pancake.
Pour or scoop the batter onto a skillet, about 1/3 cup for each pancake. Brown and crispy on both sides, about 3 to 4 minutes. The key point for this pancake is having a crispy edge. It makes a huge difference!
Serve with sliced banana, your choice of syrup. Mine is maple. These banana pancakes are fantastic with peanut butter, coconut flakes, or even add some blueberries in the batter to make blueberry banana pancakes! This recipe will make 6 pancakes so if you are making for 4, I highly recommend doubling or triple this recipe – which is super easy to do on the recipe card!

Ingredients
- 11 oz well-ripped banana (approximately 4 bananas)
- 1/4 cup plant-based milk
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- pinch of salt
- 2 tbsp sugar (depending on how sweet your banana is)
- 1/2 cup all-purpose flour
- 1 tbsp baking powder
- Coconut oil
Instructions

- Add in flour, baking powder, and cinnamon and mix well until smooth.
- Heat a large skillet or griddle over medium-low to medium heat, add 2 tsp coconut oil. Pour or scoop batter onto a skillet, about 1/3 cup for each pancake. Brown and crispy on both sides, about 3 to 4 minutes
and serve imminently. This recipe will make 6 pancakes.
