I uploaded this Filipinos Paella video long time ago, but I never uploaded the written recipe! I thought I did it already?!? Sorry for that!
So here it is!! Enjoy!!
♥ Filipinos Paella ♥
Ingredients
2 Tablespoons grape seed oil or extra virgin olive oil
4 chicken tights, cut into one bite size
1 teaspoon smoked paprika
2/3 cup small diced pork jowl bacon
1/2 cup small diced chorizo
4 to 5 cloves garlic, chopped
1/2 large onion, chopped
1/2 thumb size ginger, peeled and chopped
1/4 cup tomato paste
2 cups jasmine rice
1 teaspoon turmeric
2 1/2 cup water
2 bay leaves
3 Tablespoons fish sauce
3 soft boiled eggs
1 lb. jumbo shrimp, de-veined
1/2 lb. mussels
1/2 lb. clams
Handful grape tomatoes, halves
1/4 cup frozen peas
lime wedges
Salt and pepper for seasoning
Directions
Heat a paella pan over high heat; add oil, swirl to coat. Season chicken tights with slat, pepper and smoked paprika. When oil is shimmy, add seasoned chicken and sear for 4 to 5 minutes or until nice golden brown out side and only 3/4 cooked through. Take out from heat and set aside.
In same now-empty pan, add pork jowl bacon and chorizo; reduce heat to medium so delicious flavors will coming out nice and slow for 5 to 7 minutes. Add garlic, onion and ginger; sautee 2 to 3 minutes on medium high. Add tomato paste, sautee 1 minute; add rice and turmeric and toast to coat rice, about 2 minutes. Pour in water, stir; add bay leaves, fish sauce and chicken, gently moving pan around and stir with a spoon so the rice cooks evenly and absorbs liquid. Bring to boil, reduce heat to medium then cover and simmer for 10 minutes.
Meanwhile, cook soft boiled eggs. In boiling water, add eggs and cook for 5 minutes. Take out from boiling water and rinse in cold water. Let it cool enough to handle then peel.
Add shrimp, mussels and clams tucking them into rice, sprinkle halved tomatoes and peas right on top. Reduce heat to medium low; cover, let it cook without stirring for 8 to 10 minutes.
When paella is cooked and the rice looks fluffy and moist, turn the heat up for 1 minutes until you can smell the rice toast at the bottom(You can smell it and hear popping sound, be careful not to burn it!). Remove from heat and rest for 5 minutes. Top with lime wedges and halved soft boiled eggs.

Oh my gosh my husband would love this dish. I think I will save this recipe to have on a night that we have friends over since it serves more than me and the hubby can eat.
