Korean Cheese Pork Cutlet, Cheese Katsu Recipe!
I’ve been drooling over Korean cheese katsu all over the internet and wish I could fly to Korea to taste it. I mean, I really really really want to go to Korea to taste it.
But, I can’t travel without taking any risk nowadays, so I decided to create the flavor at home. Today, I’m using pork to “escape” the ordinary, transport my kitchen and experience those authentic Korean street food flavors!

It uses much less oil, but turns out super crunchy & delicious, you won’t even believe!

Are we ready to jump into the Cheese Katsu recipe?
Let’s get started!
Cut 10 oz of mozzarella cheese into 2” long, 1” thick pieces. You will need 8 cheese chunks for this recipe.
Prepare 8 pieces of 2 oz boneless pork loin. (total of 1 lb pork loin) Place a pork loin in between parchment paper or plastic wrap. With a meat tenderizer or heavy saucepan, pound pork to flatten to 1/8” thin. Repeat with the rest of the pork loin.
Season each pork loin piece with a pinch of salt and pepper and lay a piece of cheese on top of the pork. Roll a side closest to you and fold right and left sides toward the center and continue rolling until it’s closed.
Wrap the pork tightly with a piece of plastic wrap so the pork will keep its form. Place in a freezer for 15 to 30 minutes.
Heat a large skillet over medium high heat. Add oil and bread crumbs. Toast bread crumbs until beautifully golden brown, about 10 to 12 minutes. Stir frequently. Set aside.
Beat 2 eggs (I used 3 because my eggs are small) with 2 tbsp all-purpose flour, 1/4 tsp salt and 1/4 tsp pepper and set aside.
Preheat the air fryer to 360°F
Unwrap the cheese tonkatsu and dip in the egg mixture one by one. Coat it evenly then place in the toasted breadcrumbs. Coat it evenly with the toasted breadcrumbs by lightly pressing down the bread crumbs on the surface of pork.
Place the cheese tonkatsu into a heated air fryer, fry for 18 to 20 minutes.
You don’t have to turn it over or anything, just let them cook until cheese has ooey gooey melted. 🤤
Serve cheese tonkatsu with your favorite dipping sauce. Tonkatsu sauce, ketchup, steak sauce or BBQ sauce is great. I also like to serve with warm steamed rice, thinly sliced cabbage salad and miso soup for a completed meal!

For Pork

- 3 cups panko bread crumbs
For Egg Mixture

- 1/4 tsp pepper

I tried making this. For the bread crumbs, it burnt after cooking over medium high in less than 5 minutes, I am using electric stove. So I discarded that and tried tossing another batch over low medium temp, and I got better result. It still looks darker though. Not sure where I went wrong.
