I love creating new dish with leftovers!
Recently we don’t have microwave in the house because after the water damage our house, we took out the microwave/hood and replaced with “Actual hood”.
Oh, man I didn’t enjoy microwave trying to acting like it’s a hood, so annoying… it doesn’t even do it’s job! lol
So I’m so glad we are finally placed the real hood on top of the stove.
However, after that… we really have no idea at all where to put the microwave…
LMAO!!!
So we’ve been living without microwave for a few months now.
Only problem I have is not able to heat up the leftovers.
So I start enjoying re-creating and cook the leftovers!
So last night, I made one of my recipe Nakji Bokkeum, Korean stir-fried small octopus.
I made a bit differently, which is added some pork.
I stir fried pork first until it gave me some nice pork fat then did exactly same as my original recipe.
I made quite a bit of it so we had some leftovers, just perfect amount to make 1 portion of fried rice!
This morning I was kinda grumpy because I woke up too early then I normally do.
So I was having cup of coffee and thinking what I want for breakfast.
And when I opened the refrigerator, I saw the container of this Nakji Bokkum leftover, I was so happy!
Immediately I knew what to do with it, make delicious Korean style fried rice, Bokkeumbap!
You might think it’s too much for you as a breakfast, but not for me!
I growing up eating this spicy things in then morning! lol
What I did, was simply put rice and leftover Nakji Bokkeum and some furikake.
Furikake is rice seasoning. It was dried seaweeds, sesame seeds and savory flavors.
If I had Gim, Korean roasted and seasoned seaweed, I probably used it, but I didn’t have any. So I just used furikake.
While it’s heating up and frying, I made a fried egg quickly on another small skillet with a bit of butter.
Butter with the spicy flavor is freaking amazing dude.
So that’s pretty much what I had this morning!
So easy to fix because I had leftovers and it was very satisfying!!
When you have any leftovers in your refrigerator, try to make fried rice next time! You will LOVE it!
