This is a recipe from my mother in-law, who enjoys and love cooking so much!
When my mother in-law, April, makes this no bake cookies, she always shares her lovely childhood story about this no bake cookies…
She remembers she and her sisters coming after school and starving as death, looking for something to eat.
They had to hurry because they had to make something, eat it and clean up before their parents coming back home from work,
so they can act like nothing happened… lol!
“We will eat it even before settle, just scooping out from the pot.” She says, “We didn’t even have time to let it settle but sometimes we preferred to eat it when it’s soften!”
Hungry teenagers… Your parents weren’t exceptions. lol!

Mother In-Law’s No Bake Cookies
- Total Time: 5 mins
- Yield: 42 to 45 cookies 1x
Description
Ingredients
- 1 stick of butter or margarine
- 2 cups sugar
- 3 Tbs cocoa powder
- 1/2 cup milk
- Dash of salt
- 1 tsp vanilla
- 1/2 cup peanut butter
- 3 cups quick oats
Instructions
- Combine butter, sugar, cocoa, milk and dash of salt in a saucepan. Bring it to boil over medium high heat, stirring occasionally. Boil for 1 minute and remove from heat.
- Stir in vanilla and peanut butter. When peanut butter melted in, stir in oats.
- Drop by teaspoons on wax paper or parchment paper. Let it cool at least 20 minutes to 1 hour. Enjoy!

I grew up eating no-bake cookies, and they are my husband’s favorite! I’ve found there’s a fine line between under and overcooking the mixture, and I personally never use time as a gauge. I do like I would for candy making and periodically drizzle some of the bubbling mixture into ice water. Once it reaches the stage where I can roll it in my fingers into a soft ball, I know it’s done. Depending on past recipes I used, instructions would be to cook it anywhere from 1 – 5 minutes but it was 50/50 that I’d get cookies that either wouldn’t set or would end up rock hard. Then I thought to try the ice water method and have success every time now! I , too, love eating it soft out of the pot, but given that time is the essence to get it scooped onto the paper, I just leave a bit in the pan to eat after. 😊
