How was your last weekend?
I had a crazy busy weekend!!!
From Thursday through Saturday!!
Most of the nights I passed out on the couch, wake up and start cooking all day long.
And finally, Sunday we had some time and space to breath. 🙂
So even though I was so tired by cooking, I started playing in the kitchen. Again. lol :-b
I have no idea where this idea came from, because I made this dish just because I had a pack of ground pork and dumpling wrappers.
Anyways, I would name this dish,
“Fried Dumplings with Cilantro Salad”
The idea of mine was; spicy, sweet but VERY VERY refreshing dumpling dish.
So I made a sauce, and tried one. It wasn’t refreshing enough.
I added more fresh stuff, and tried again. But it still wasn’t there.
In my head, all it needed was more freshness, more herb.
And I thought, “Go big or go home!” lol
So instead of “Dumplings and Dipping Sauce”,
I deiced to toss the dumplings with lots lots lots of cilantro and almost vinaigrette like sauce.
And guess what?!
OMG, it was KILLER!!!
We just loved it so much!!!
Meaty, crispy and lots of flavor from dumplings.
Sweet, sour and spicy pineapple sauce with a lot of fresh cilantro.
It was so good, we couldn’t stop eating it!!
Fried Dumplings with Cilantro Salad
Ingredients
1 lb Ground pork
3 green onions, finely chopped
3 clove garlic, finely chopped
1/2 teaspoon grated ginger
1/2 stalk lemon grass, grated (Around 2 teaspoons)
Hand full cilantro, leaves picked, chopped (Around 1/4 cup)
1 habanaro, seeded, finely chopped
2 teaspoons shaoxing wine (Chinese Cooking Wine)
1 Tablespoon fish sauce
1 Tablespoon sugar
pinch of salt and black pepper
2 teaspoons cornstarch
30 to 35 dumpling wrappers
Cooking oil
Cilantro Salad
Directions
1. Combine all ingredients from first to cornstarch, in a mixing bowl and mix well with your hand until it thicken.
2. Place a heaping teaspoon of filling at center of a wrapper, wet edges with water. Bring opposite points toward each other and press edges together. Repeat with remaing wrappers and filling. It will makes 30 to 35 dumplings.
3. Heat a large skillet that has a lid over medium high; add 2 Tablespoons oil or enough to coat skillet and place the dumplings on hot skillet.
4. Add 1/4cup water and cover with lid.
5. After 5 minutes or all the water has evaporated, roll it over to golden brown evenly all sides. Translate to a mixing bowl, toss with cilantro Salad. Enjoy with your cold beer!!
Cilantro Salad Ingredients
1/4 cup chopped pineapple in natural juice
1 to 2 Tablespoons chopped red chilies (Fresno, cayenne, thai or etc.)
Fresh juice from 1 1/2 lemon
1 Tablespoon sugar
2 Tablespoons fish sauce
1/2 teaspoon grated ginger
Hand full cilantro, leaves picked
Combine all ingredients except cilantro, whisk well until sugar has dissolved.
Add Cilantro toss well.
Actually it will be really good with a bit of holy basil in the cilantro salad..? Hmmm..
