You’ve been waiting long enough for my drunken noodles recipe!

Mix your choice of protein (I used shrimp and pork belly), fish sauce, garlic and white pepper in a mixing bowl and let it marinate while preparing other ingredients, about 10 minutes.
Combine oyster sauce, fish sauce, soy sauce, dark soy sauce and palm sugar in a small mixing bowl and set aside.
I like to purchase palm sugar in a jar, so I can add some water and let them sit for over a week. Then the palm sugar gets nice and soft, easy to scoop it out. Also the water becomes like a syrup, that I love to use time to time too!
You could pound garlic and thai chili in a mortar and pastel like I did on my Thai Basil Fried Rice recipe, but if you don’t have the mortar and pastel, you can just smash them and then chop. This way also works to release the natural oil and more flavor from garlic and chili.
Slice shallot and red chili (not Thai chili, to add at the end. Optional). Cut Chinese broccoli or broccolini into bite size and take basil leaves out from the basil stem. If you can find holy basil, that would be the best but you can also use Thai basil or regular Italian basil.
I highly recommend to use fresh rice noodle sheets for this recipe. You can find them at local Vietnamese market or Asian market. If you can’t find them, you can use dried rice noodles too. Just soak the dried noodles in hot water for 15 minutes and when it’s soften up, drained.
If you are using fresh noodles, cut into large chunks and separated each layers.
Heat a large skillet or a wok over high heat until smoking. Add cooking oil swirl to coat. Add garlic, chili and shallot. Stir fry for 30 second to 1 minute.
Add marinated protein and stir fry for 1 to 2 minutes.
Now toss in Chinese broccoli and stir fry for minute.
Add prepared noodles and the sauce mixture. Toss and stir everything tighter for 2 minutes. (If you’re not using fresh noodles and the noodles are not done, add 1 tablespoon of water at a time until it’s done.) If the noodles are stick together too much, add 1 tsp of cooking oil at a time.
Turn off the heat and add basil and red chili.
Toss everything together and serve immediately with a lime wedge.

For the Protein
- 8 oz pork, chicken, beef, shrimp, extra firm tofu or mixture of the proteins
- 1 tsp fish sauce
- 1 clove garlic, grated
- pinch of white pepper
For the Sauce
- 2 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tsp dark soy sauce
- 2 tbsp palm sugar or honey
- pinch of white pepper
For the Stir-fry
- 2 tbsp cooking oil
- 8 cloves garlic, crushed then chopped
- 1 to 5 Thai chili, crushed then chopped
- 1 large shallot, sliced
- 6 oz Chinese broccoli or broccolini, cut into bite size
- 1 lb fresh rice noodle sheets, cut into large chunks and separated or dried rice noodles soaked in hot water for 15 minutes then drained
- 1 red chili, sliced, optional
- Handful basil leaves (approximately 2 cups)

Hello I would try this recipe..but the pork i don’t eat how would you incorporate the tofu in this recipe….are the drunken noodles are there gluten free..
You can add either fried tofu, or just cubed tofu and stir fry. Yes, you can find some rice noodles that are gluten free!
If I am using dry rice noodles…how should I use for this recipe?

I see there are two different types of soy sauce used in the sauce. What should I do if I only have regular soy sauce you buy in the store?

This is so delicious. I used a pork tenderloin sliced super thin and it was delicious. I did end up adding a little more soy sauce than it called for to my taste. Beware of Thai chili’s! I added one Thai chili to mine and it was so spicy our noses were running and lips burning 🥵
Hi Seonkyoung!! I made this the other day me and my boyfriend LOVED it! The only thing is we can’t find the fresh noodles anywhere 🙁 I checked 3 chinese market. Is there a type of asian market you usually find it? (Maybe Korean?) and which section it’s in?

Really, truly loved this recipe for Drunken Noodles. I decided to try to make my own Drunken Noodles after my favorite Thai restaurant closed. (Damn you, COVID) It was easy to make…. not so easy to find fresh rice noodles, but I did and dinner was delicious!! My husband’s comment, “I am really impressed”. Used regular basil since I couldn’t find Thai basil and it was still incredible. I used cayenne peppers that I grew in my garden and it was surprisingly not as hot as I had hoped so I added some of Seonkyoung’s chilli oil that I always keep handy. Squeeze of lime garnish is perfection. Love this quick and easy delicious recipe <3
When you buy those red chilies in the store, what are they called? I’ve only ever seen green chilies in that shape and size, Serrano. Can you sub them out with Serrano?

I love Drunken Noodles for takeout and it came out seriously just as good as our favorite Thai restaurant which I have been craving, but is too far for takeout!! For those of you looking, Imperfect Foods (online grocery/home delivery service) sometimes carries Nona Lim fresh Pad Se Ew wide rice noodles, that’s the only place I have found fresh rice noodles, and they worked great. I was able to find everything else at an Asian grocery, except palm sugar, which I subbed honey. Thank you for a great recipe, we will be making this again!!

This recipe was SO good! I did too round steak and shrimp and my goodness it looks just as striking as it tastes. I just need to get an actual wok since my cast iron skillet cannot accommodate all the ingredients at once! Can I ask what the brand of Oyster sauce you use that I see pictured? That is the first one I ever got but my grocery store stopped carrying it after that and I was unable to track it down online. No other oyster I’ve picked up since has come close to that one and I am desperate! Thank you!!
I’ve been trying different recipes for drunken noodles and this is the best one I’ve found! I really enjoyed it, exactly as written. 2 Tbsp of oyster sauce, 8 cloves a garlic, and 2 Tbsp of palm sugar seems like a lot but I wouldn’t change a thing. Thank you!!!
