Today, I’m sharing a Chinese cucumber salad recipe. You probably had this at your local Chinese restaurant and have always wondered how to make this simple yet delicious cucumber salad at home. Today, I will share the secret!

Cucumber Kimchi Salad Recipe : Quick Cucumber Kimchi
When I had this Smashed Cucumber Salad in Taiwan, it was so refreshing, crunchy, and just the perfect side dish for other flavorful dishes I was eating. It’s also mild, not spicy at all, so I really wanted to share the recipe with you so your kiddos can enjoy it, too!
First, let’s make the dressing. Super duper easy.
Whisk soy sauce, vinegar, sugar, salt, and sesame oil until the sugar has dissolved. When sugar and sesame oil are all combined completely, the texture of the dressing should be a bit thicken.
The soy sauce I use for most Chinese recipes is the Pearl River Bridge brand Superior Light Soy Sauce .
It is an excellent quality all-purpose soy sauce, and I definitely recommend you have one in your pantry!
Mix in finely chopped garlic and shallot.
I accidentally added too much shallot. It was still super delicious, but if you want to reduce the amount of the shallot, go ahead and do so. 1 small shallot is perfect for this recipe for my taste, so adjust it to your taste.
Ok, here is the fun part of this cucumber salad recipe! Smashing the cucumber!
Cut the ends of cucumbers and smash them down with a side (wide) part of a knife a few times until they are broken. If you don’t feel comfortable using a knife, you could use a rolling pin, a saucepan, or a flat part of the meat tenderizer.
Then, cut them into 1-inch-long pieces. Remove any big seeds to prevent the salad from being watery.
Add cucumber into the dressing and mix everything together.
You can serve it immediately or keep it in a refrigerator for a couple of hours before serving.

Chinese Smashed Cucumber Salad
Ingredients
- 1 1/2 tbsp soy sauce
- 3 tbsp rice vinegar
- 3 tbsp sugar
- 1/4 tsp salt
- 1 tbsp sesame oil
- 1 clove garlic, finely chopped
- 1 small or 1/2 medium size shallot, finely chopped
- 2 lb Persian cucumber
Instructions
- Whisk soy sauce, vinegar, sugar, salt and sesame oil until sugar has dissolved and thicken. Mix in garlic and shallot.

Remove some big seeds if there’s any to prevent from watery salad.

This recipe is a problem. I have made it 2, once with the onion and once with some ginger instead and it was delicious both times. I had a hard time sharing it with my husband!
