This is the recipe I would love to make in summer time when lots of friends coming over, and having a casual cocktail party.
It’s so handy to eat, perfect for any party. I guaranty you will “WOW” the guests by the visual first and then second the flavor!
Also it’s very light, even though you are on a diet, don’t worry! It’s one of the healthy recipes I have!!
Because I used perilla leaves(깻잎, wild sesame leaf) in this recipe, the flavor is something you never had from ordinary poke.
I loved this a little Korean twist on poke and created my own. It made me feel very proud of myself.
I hope you guys try this recipe soon, or when you find sashimi quality salmon in fish market!! It won’t disappoint you, I promise!
Salmon Poke with Perilla Leaf in Crisp Wanton(Wonton) Cup
Ingredients
1/4 cup Sesame oil, plus 2 Tablespoons more for poke dressing
24 wanton wrappers
3 Tablespoons Soy sauce
4 Tablespoons Rice vinegar
1 Red chili, finely chopped
4 Green onion, chopped
3 cloves Garlic, finely chopped
1 teaspoon Sesame seeds, plus more for garnish
8 Perilla leaves, shiponate(sliced into long thin strips) plus a couple more for garnish
2 cups 1” X 1” wide, 1/2” thick cubes sashimi quality fresh salmon
2 avocados cut into 1/2” cubes
Lime wedges to serve
Directions
Preheat oven 375 degrees.
Brush 2 of 12 cups cupcake pans with sesame oil, and place wanton wrappers like cupcake holder. Lightly brush wanton wrappers with sesame oil.
Bake it for 8 to 10 minutes for golden brown wanton cup, or 13 minutes for extra crunch wanton cup.
Mean while, let’s make salmon poke!
In a large mixing bowl, combine soy sauce and next 6 ingredients; add salmon and toss evenly, so salmon will marinate with delicious sauce all around!
Cover with plastic wrap and keep it refrigerator until wanton cups are ready!
Let wanton cups completely cooled, because we are going to fill it up with cold sashimi type filling. You don’t want to mess up with temp when you handling fresh fish and trying to eat as raw at home.
When wanton cups are completely cooled, fill up with poke; top with a couple pieces of avocado, perilla leaves and sprinkle with extra sesame seeds.
Finally serve with lime wedges for extra fresh and tanginess!
Serve cold.
Enjoy!!
I hope you enjoy it as much as I did! ^0^
