This delicious buckwheat noodles recipe confirmed by my mom!
If she said it’s delicious, it means delicious! 😀 I was SO-HAPPY to hear that from my mom and she was keep saying “It’s really good!” “It’s really delicious!” Oh, yeah! I was a happy girl right then. 😀
It’s a fantastic vegetarian recipe that everybody can enjoy!!
Vegetarian Buckwheat Noodle Salad with Mushrooms and Crown Daisy
Ingredients
2 bundles (180g/4 oz) buckwheat noodles
4 Tablespoons soy sauce
2 Tablespoons rice vinegar
3 Tablespoons honey
1 Tablespoon toasted sesame oil
1 Tablespoon toasted sesame seeds
1 clove garlic, minced
2 green onions, chopped
1 package (5 oz) enoki mushroom, shredded with hands
5 oz oyster mushroom, ripped in halves to quarters
Handful crown daisy, thick stems removed(leave thin stems though)
Directions
Bring water to boil over high heat in a large sauce pan. Add some salt(basically season noodles), then add buckwheat noodles. Cook noodles by following direction of package. (Normally it takes 6 to 8 minutes.)
Meanwhile make dressing. Combine soy sauce and next 6 ingredients(When you adding sesame seeds, crush down with your finger for extremely nutty flavor!) in a large mixing bowl.
When noodles have only 2 minutes left to finish cooking, add mushrooms into boiling noodles; cook for 1 minute. Next, add crown daisy into noodles and mushrooms; cook for 1 minute. Remove from heat then drain. Rinse with cold water until every ingredients became cold. Drain completely. Add into dressing we made earlier, and toss with your hand evenly.
Transfer to a serving plate and top with more toasted sesame seeds.
