EASY Kimchi Noodles!

I noticed that now days (stay home, shelter in place, quarantine… because of COVID 19), we all looking for something EASY to make with the limited ingredients in our hand. So that’s why I decided to do this simple and easy Asian pasta recipe series and hope you guys love it!!
My Asian pasta recipes need only few ingredients to accomplish and most of you probably has those ingredients.
Let’s start with delicious EASY Kimchi Noodles!
This is probably one of the best pasta recipe I came up with. It is thick and bold in flavor yet very approachable. If you have some kimchi in your refrigerator, you’ve got to try!
I highly recommend to use old sour kimchi for this recipe. But no worries if you don’t have one, just add some vinegar! It will do the trick! 😉
First thing is first, cook pasta in salted boiling water by following the directions of the package.
Meanwhile, heat a wok or a large skillet over medium high heat, add butter and let it melt. When butter ’s melted add ground pork and cook until ground pork is fully cooked and brown edges.
Stir in kimchi, miso, sake and black pepper and cook everything together about 4 minutes. If the sauce gets too thick too fast, add 1/4 cup of pasta water at a time.

Stir in cooked and drained pasta into kimchi sauce and toss everything together.
Sprinkle some parmigiano to your taste. YES!! Cheese is AMAZING with Kimchi! If you haven’t tried yet… you MUST!

- 1 cup kimchi, chopped

- 1/2 tsp black pepper

I made this tonight and it was SO delicious! My husband and I devoured everything on our plates. It was *extra yummy with the parmesan cheese. Hi there, I’m going to try this recipe, but I have no miso or doenjang (Korean fermented soy bean paste). Is there something I can replace this with?
If you have gochujang paste, that’s also very good and adds more of a spicy kick.

This Kimchi Noodle recipe is so good. I used Chung Jung One Mild Doenjang Soybean Paste and a bit of Momo Dressing Yuzu Ponzu Sauce for a more flavorful taste. A one of a kind recipe. Our family loved it. Best paired with Vitasoy Vita Reduced Sugar Chrysanthemum Tea.
