I made Japanese, Korean and Chinese egg drop soups.

They all look similar but the tastes are so different.
So figure out which one is your favorite!!
We all have our own way to make egg drop soup,
sometimes we add some extra ingredients such as silken tofu, potato, shrimp, corn, pea, or etc.
Yesterday I made without any extra ingredients, just pure egg drop soup.
First, Korean Style
In Korea, anchovy broth is often used for egg drop soup.
No corn starch for thicken the soup and it’s commonly served as a side dish with rice and other side dishes, instead an appetizer.
Season with salt and pepper.
I prefer to add some garlic when I’m making the broth for Korean egg drop soup.
Because it’s very simple ingredients, a small clove of garlic can develop the flavor BIG time.
I recommend silken tofu in Korean egg drop soup if you desired, as an extra ingredients in the soup.
Second, Japanese Style
I love to use dashi broth for Japanese egg drop soup.
Ginger is often used for Japanese egg drop soup and also corn starch water for thicken the soup.
Season with tsuyu (Soy, dashi, mirin and sake based sauce, commonly use for dipping noodles and tempura, or seasoning food. It’s very savory but slightly sweet).
The most popular egg drop soup in Unite States, Chinese egg drop soup.
It’s based on chicken broth, season with salt and white pepper, and corn starch water for nicely thicken the soup.
I added sesame oil for more “Asian-y” flavor.
I think a little bit of sweet crunch such as corns or peas will develop the Chinese egg drop soup from the “Good-soup” to the “Wower-soup”.
The same part of the egg drop soups is they include green onions.
And sesame oil and seeds are totally up to you.
