Are we ready to cook? Let’s get started!
Pour 10 cups of water in a large pot and add shiitake mushrooms. Bring it to boil over high heat.
Add spam, ham, sausage, tofu or/and imitation crab meat for extra protein. Add broccoli, chili, kimchi or/and bok choy for extra veggies.
Instant ramen usually packed with umami and full of flavors, but I found adding sliced shiitake adds just right amount of meaty texture and flavor into ramen.
Meanwhile, open all the ramen packages and separate the noodles, dehydrated veggie packets and powder seasoning packages.
Today, I’m using Jin Ramen. You can use any Korean instant ramen for this recipe though.
Honestly, Shin ramen will be my first choice but during this quarantine time, Jin Ramen is only ramen we were able to get.
Go ahead and add dehydrated veggie and powder seasoning packages into water.
This wouldn’t change any flavor or taste, but when you cooking more than 5 instant ramen noodles, this is always smart way to prepare yourself and not fail making ramen.
This is very important part of making instant ramen noodles. When ramen soup base is boiling, taste soup.
If it’s salty, add a bit more water. If it’s blend, keep boil longer.
After add noodles, there’s no way to fix the ramen. So we have to make it perfect before noodles goes into the soup.
If the soup base is perfect to your taste, add noodles as quickly as possible. Keep stir and lift up noodles constantly.
This way, noodles will have better chewy texture. Bring back to boil.
Soup is boiling again, then go ahead and carefully drop eggs into soup. You can break eggs like egg drop soup for more milder flavor or just poach eggs to your taste.
Add green onions and cook 1 more minutes and it’s done!
The total cooking time of the noodles should’t be more than 4 minutes (+- 1 minute depending on the brand).
Serve immediately with kimchi!
Another tip! When you have leftover soup, add rice! This is so different than eating noodles and it is SO GOOD! A lot of Koreans do this to feed bigger crowd without cooking extra ramen noodles.

Never knew the chewy noodle trick! Haa haa! Adding rice to ramyeon brought back childhood memories…like eating rice with butter and ganjang! Thanks for the back to basics recipe!
Great recipe loved it!
Can you recommend a ramen brand that does not use palm oil?
Jin Ramen is one of my fave Asian noodles. I like it a lot that I always make sure to have stocks in my pantry. An easy go-to product with so much flavor going around your mouth.
