As you know, (If you’ve been reading my blog for a while) I’m cooking at the chapel on Air Force base every Wednesday for the pioneer club. (my hubby is in Air Force for over 14 years! I’m so proud of him!)
This week, I made
“Roasted Sage Pork and Chicken with Balsamic Reduction, Grilled Peach, Lemon Basil Couscous, and Honey Roasted Onion”
Hoo, the menu is pretty long! lol
Anyways the journey starts from my kitchen in the morning.
Making the balsamic reduction, witch is almost killed me, physically.
If you follow me on Facebook, you probably saw this picture, and we made funny comments and stuff about this many bottles of vinegar. At that time, I didn’t know it will hurt me so bad.
I started boiling 9 bottles of vinegar in the house (Windows were open), my nose and my eyes were BURNING!!!!!! I couldn’t breath?! If you make it only for your family, it is totally fine, but if you do like how I did…. you must be a silly as I am. lol
I’m telling ya, it was one of horrible ideas I’ve ever had.
I must be smarter than this. lol
Anyways, I’ve got to add a bunch of rosemary in to that bomb, so I had to get close! lol

After finished balsamic reduction, I tied up pork tenderloins and then I head to the chapel.
At the chapel, I started season pork and chicken with fresh chopped sage, salt, pepper and olive oil. I seared them all evenly, then put on baking sheet put in the oven, forget about it for awhile, and doing other things.
I started make couscous. It’s so easy to cook, you just boil liquid (water, stock, or mix) and add couscous, cover, remove from heat and let it sit for 5 minutes. Then fluff up them with a fork. The ratio of couscous and liquid is 1(couscous) : 2(liquid).
I grilled some peaches to goes with the main dish.
It seared beautifully!! Everyone wondered what kind of fruit it was. 🙂 Regular yellow peach can be very sexy, beautiful and delicious in totally different way!

Ahhh, my balsamic reduction… Gave me a very hard time to me, but I was so happy it turned out very thick and lovely. 🙂 Feels like I raised a bad behavior kid to a very good behavior kid in one day! lol
This is the chicken breast, everyone loves it! Especially the kids. 🙂
I was so happy that everything turned out really good and everyone enjoyed the dinner so much! I forgot to take a picture of Honey Roasted Onion, but it served with the dinner. 🙂
Next week I will cook Roasted Beef. YAY~!
I will make mashed potato and warm seasonal vegetables to serve together.
I can’t wait to cook again for them next week already! hehehe.
