I would like to introduce you guys this healthy drinking vinegar from Korea.
This is a picture of 100 year (Baek Yeon Dong An) Korean Berry Drinking Rice Vinegar by Sempio.
I would call Korean balsamic vinegar.
100 year (Baek Yeon Dong An) means if you drink this vinegar you will be young and healthy for 100 year.
It’s made out from 100% fresh brown rice and has been 3 different steps fermentation.
They have 6 different kinds flavors, and what I have is Korean (Wild) berries.
It’s 100% whole grain vinegar beverage that you can drink as a juice if you mix with water, sparkling water or milk.
Normally in Korea we add in water and drink as a healthy juice especially in summer time.
But I wanted to show you some different way to eat this delicious vinegar, because I’m a chef. lol
It’s naturally sweet from the Korean berries, so I thought it would really good on salad.
Like Italian balsamic vinegar.
But it was very thin texture, so I had to boil down to a proper consistency to use for salad.
In a small sauce pan, put 1/2 cup of the Korean Drinking Vinegar; bring to boil and reduce heat to medium and simmer for 10 to 15 minutes or until thickened. Like syrupy texture.
It became 1/4 cup after I reduced it.
Cool completely before use.
If this is too strong flavor to you, just use as a lemon juice, mix with oil, salt and pepper.
I added salt, pepper and extra virgin olive oil into the salad already, and then pour the reduced vinegar.
Toss it all together before serve.
The salad I made today was green lettuce, cucumber, tomato and grapes.
But you can use this reduced Sempio Berry Vinegar for anywhere you would like to use with your balsamic vinegar.
The leftover dressing in the bowl, I dipped with bread and it was So GOOD~!!
We enjoyed it very much!!!
It’s very nicely sweet and very flavorful.
Next time I want to try with tofu salad! I think it will be really good!!!
And I want to try to make a cocktail with it.
