So here it is!! ♥
♥ Korean Spicy Stir-fried Shrimp with Somyeon ♥
Ingredients
1 teaspoon gochujang
1 Tablespoon mirin
2 Tablespoons sugar
1 heaping Tablespoon Korean red flakes
1 teaspoon sesame oil
5 cloves garlic, chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
12 oz. large/jumbo size shrimp
1/2 small onion, 1/2 inch thick sliced
1 small carrot, sliced
1/2 small zucchini, cut into 2 inch strips
1/4 yellow bell pepper, cut into 2 inch strips
1 jalapeno, sliced
1 red chili, sliced
3 green onion, sliced
2 cups bean sprouts
6 to 7 oz. somyeon
Directions
Combine first 8 ingredients in a small mixing bowl, whisk; pour into shrimp, mix well and set aside.
In a large pot, bring water to boil; add salt. Blanch bean sprouts first for 5 seconds; take out from broiling water, set aside. – Do not rinse with cold water, we want bean sprouts to be warm. In same boiling water, add somyeon. Follow directions of package for cooking time. – Usually a couple minutes. Drain, rinse in cold water. Drain again completely, set aside.
Heat a large wok over high heat; add oil and swirl to coat. Add onion and carrot, season with a small pinch of salt and stir-fry for 1 minute. Add zucchini, stir-fry for 30 sec. Add shrimp mixture and stir fry for 3 minutes. Shrimp should be 3/4 cooked through, now add bell pepper, jalapeno and red chili; stir-fry for 30 seconds, add green onion and remove from heat.
On a serving plate, lay cooked somyeon first, then blanched bean sprouts and stir-fried shrimp. Sprinkle with sesame oil and seeds. There you have it!
