Do you remember I made tarragon pork the other day?

We had a piece of pork and sauce leftover, so I made totally different dish out of it!
I made shell pasta with spinach and ricotta based on the leftover sauce!
I chopped up a piece of pork into bite size, and pour everything into a wok. Of course you can use large skillet, but I love use this Tefal wok, so so convenient!!
I added 1/2 cup ricotta cheese, and add good pinch of salt and pepper. Even though the leftover tarragon sauce is perfectly seasoned, ricotta is very bland. So need to season another layer to have flavorful pasta dish at the end.
I though I will just finish as it is and serve with a side salad, but it didn’t sound fun. So I just decided to add spinach(that I was going to make salad) into the pasta. Oh, and I also added some mushrooms, mushrooms add so much texture into the dish and it is SO good for ya! If you don’t wanna fight with cancer, eat various mushrooms everyday!
They are meaty, soak up any flavors you add into. It’s one of the amazing ingredients in the earth.
Add some parmigiana and lemon juice, there you have it!

I finished with some extra parmigiana and lemon zest.
SO-GOOD!!
Don’t be too complicated with leftovers. Just play with other leftovers in your refrigerator!
Just remember, mix up the colors and textures.
