What do I feel after made Macaron for a first time?
I got rid of all those thoughts in my head.
Yes, it’s technical. Yes, it’s classic. Yes, it’s easy to fail.
But if you are being patient, and give enough love and care to those lovely cuties, they will pay you back. I promise.
Here is a How-to Macaron video I watched before I made ’em.
It really helped me a lot. (how it should look like each steps and more.)
So, if you want to make sure if you are doing it right, watch this video first.

I made 3 batches all different classic flavors. Vanilla, coffee and rose water.
Next time when I make Macaron, I want to try yuzu, strawberry and green tea. ^^
I made Vanilla first. This is how it looked like when it came out from oven and cooled for 15 minutes.
It turned out pretty good for a first time, right? I was so so happy because none of ’em cracked.
And this is how it looked after I filled up with vanilla butter cream. ^^
Macaron is extremely sweet, and I didn’t know about it! So whenever I tried very first bite… You just should saw my face. lol I’m just not a sweet tooth and it was just way too sweet dessert for me. I still love it though, because it’s so cute! lol
I will share the recipe from my macaron book and also my personal tips.
Vanilla Macaron
Ingredients (Make 16)
2 extra large egg whites
1/4 cup superfine sugar
1/2 teaspoon pure vanilla extract
3/4 cup ground almonds, sifted
1 cup confectioners’ sugar, sifted
Filling
4 Tablespoons unsalted butter, softened
1/2 teaspoon pure vanilla extract
1 cup confectioners’ sugar, sifted
Directions
Line 2 baking sheets with parchment paper. Sift ground almonds and confectioners’ sugar together into a bowl.
Place the egg whites in a large bowl and whip until holding soft peaks. Gradually beat in the superfine sugar* to make a firm, glossy meringue. Beat in the vanilla extract.
Using a spatula, fold the almond mixture into the meringue one-third at a time. When all the dry ingredients are thoroughly incorporated, continue to cut and fold the mixture until it forms a shiny batter with a thick, ribbon-like consistency.*
Pour the batter into a pastry bag fitted with a 1/2-inch/1-cm plain tip. Pipe 32 small circles onto the prepared baking sheets. Tap the baking sheets firmly onto a work surface to remove air bubbles. Let stand at room temperature for 30 minutes.* Preheat the oven to 325 degree.
Bake in the preheated oven for 10 to 15 minutes. Cool for 10 minutes. Carefully peel the macaroons off the parchment paper and let cool completely.
To make the filling, beat the butter and vanilla extract in a bowl until pale and fluffy. Gradually beat in the confectioner’s sugar until smooth and creamy. Use to sandwich pairs of macarons together.
*Seonkyoung’s Tip: I didn’t have superfine sugar so I used regular granulated white sugar. It worked just fine.
If you watch the video I recommend beginning of this post, it shows the perfect example.
Dry the macarons before bake is very important step to make perfect shape and lace. Which is makes macaron very special. This recipe says 30 minutes but 30 minutes is minimum of the drying time. Again, if you watch the video I recommended, you will understand that it can be between 30 minutes to 1 1/2 hour.
This is my 3rd batch rose water flavor.
No, I didn’t take a picture of the 2nd one – coffee flavor. because I didn’t dry it enough so didn’t turned out right.. 🙁 You can see coffee macarons behind of rose macarons. lol
Rose water macarons were my favorite out of those three! My hubby said it’s perfumery taste but to me it was just perfect amount! I loved it!

I am not much of a sweet tooth when it comes to baked goods. I wonder if there is away to lessen the sweetness of the macaroons. I would love to make them but I do not like sweet too much.
